That’s where this sandwich comes in. It’s a thorough joy to eat – and it’s filled with goodies like avocado, spinach and radish, too!

The cheese is the naughtiest bit, but a couple of slices of cheese seem to be a fine pay-off for all that veggie goodness. And if it encourages you, or those you’re eating with to eat more veg, then so be it.We made this lovely sandwich from just six simple ingredients. We also made another 29 just like it! The only non-vegan item in this sandwich is the cheese. And as you’re no doubt aware there are many vegan options on offer these days. Grab something from a store, or even try making your own vegan cheese! Cashew is a very popular choice. Of course, most bread isn’t gluten-free – though any good speciality store carries a gluten-free version these days. If you were hesitant to try it, or had sadly waved goodbye to sandwiches, now might be a good time to give it another try.

Crispy Fried Chicken

Allowing the buttermilk-flour mixture to come to a paste-like consistency is key to a crispiness on the outside and juiciness on the inside. · Most fried chicken is cooked at a high temperature throughout the frying process. This one, however, only starts at a very high heat — after browning, the heat is reduced for about 30 minutes. You'll turn up the temperature again at the end, locking in that crispy texture. · Paprika adds smoky flavor and has a low smoke point, which helps with browning the chicken.

Combine the flour, paprika, salt, and pepper in a zip-top bag. Seal the bag and shake until well-combined. Pour buttermilk into a shallow bowl, then dip the chicken (on both sides) until it's completely soaked in buttermilk. Place the soaked chicken in the bag with flour mixture, seal, and shake well to coat. Transfer the coated chicken to a baking sheet, and cover. Allow the flour coating to become a paste-like consistency. Pour the oil in a skillet and bring it to high heat. Brown the chicken on both sides, then reduce the heat, cover the skillet, and cook for about 30 minutes. Remove the cover, return the heat to high, and fry until extra crispy.
